Lemony Lentil and Chard Soup (Adas bi Hamod)

Nothing feels better in the cold, rainy weather than a warm bowl of healthy vegetarian soup. We usually have this soup as our main dish because it is filling and very nutritious. It is also very easy to prepare and delicious to eat. Let’s cook together and have some fun! 🙂 

This recipe makes 4 large bowls. 

Ingredients

  • 1 Bunch of Chard
  • 1 Bunch of Cilantro 
  • 1 Cup of brown Lentils
  • 2 Carrots 
  • 1 Onion 
  • 5 Large Garlic Cloves 
  • 4 tbsp Lemon Juice
  • Salt 
  • Black Pepper
  • Optional: 1 small Potato 

Making the soup

I started by cutting around the chard stem then dicing the chard stem into 1/2 inch (1 cm) pieces. I cut the leaves to 1/2 inch wide strips. I finely chopped  my cilantro. After that I diced my carrots and potatoes into 1/2 inch cubes. I placed all these ingredients along with my washed lentils in a pressure cooker off heat. 

I chopped my onion and minced the garlic. I placed my onion in a skillet with 2 tsp of oil on medium heat until it became translucent. I then added my garlic and cooked them until the mixture became golden brown. 

I added the onions and garlic to the pressure cooker and covered all the ingredients with water. I set my stove on high heat until the mixture boiled. When it started boiling, I lowered the heat to medium-low and covered my pressure cooker and pressurized it. 

After 30 minutes, I let the pressure out, and removed the cover. Finally, I added the lemon juice, salt, and pepper. I tasted to make my final adjustments and served in a bowl with toasted pita bread and extra lemon for my husband who loves his soup extra lemony! 🙂
