Creamy Peanut Butter Chicken

Growing up my mom use to make this delicious dish for me. We use to call it “Susu Bandi” but I am not sure if this is its real name. This is an African dish with a delicious creamy peanut sauce. She taught me how to make it and I love it so much that I  want everyone to taste it.  So today I am sharing my mom’s recipe, one of the best cooks I know! Let’s cook together and have some fun! 🙂

This recipe makes 4 servings. 

Ingredients

  • 2 large Chicken Breasts
  • 1 medium Onion (finely chopped)
  • 2 Garlic Cloves (crushed)
  • 1 large Tomato (grated)
  • 400g Creamy Peanut Butter
  • 1 tbsp Lemon Juice
  • Salt
  • Black Pepper
  • Red Chili Powder
  • Crushed Chili Pepper
  • 2 Cinnamon Sticks
  • 2 Cardamom Pods 
  • 2 Bay Leaves

Making the Chicken Peanut Butter

I started by sauteing the chicken breasts in 2 tbsp of oil, some salt, and black pepper in a large pan on medium heat. Once they are cooked and started to golden I covered them with around 1 1/2 liter or 6 1/3 cup of water and added the bay leaves, cinnamon sticks, and cardamom pods and let them simmer for 13 minutes. I then removed the chicken and strained the water in a bowl so that I can use it as my broth. In a separate bowl, I poured the creamy peanut butter and 1 liter or 4 1/4 cup of the chicken broth left aside I whisked them together until the mixture became smooth with no crumbles. I cut the chicken into thin slices and kept them on a plate aside. 

In a large pan, I sauteed the chopped onions with some oil until translucent. I then added the garlic and sauteed them for an extra 2 minutes. I mixed the tomatoes in and kept them on medium heat until they started to boil. At that point, I added the peanut butter mixture and the sliced chicken and let it simmer on medium heat until the mixture thickened. I finally added the salt, spices, and the squeeze of Lemon and turned the heat off.

I served this dish with a side of white rice and with extra peanuts on the top. The extra peanuts not only complimented the dish but also added a crunchy texture. My husband called them little surprises. It was a very delicious meal that we enjoyed over 2 days 🙂
