Salads are a big part of my cooking during Summer. I am always finding myself trying new salads with whatever vegetables or even fruits in my fridge. Today, I am trying a new recipe with Granny Smith Apples which are my favorite kind of apples. It turned out very delicious and refreshing especially with my creamy Honey Mustard dressing. This recipe makes a medium size bowl (around 2 servings).
Ingredients
Salad:Â
- 1 Romaine Lettuce heart
- 1 Granny Smith Apple
- 1/2 AvocadoÂ
- 3 European Cucumbers
- 10 Cherry tomatoes
- 3 Green Onions
- 1/4 cup Corn
- 2 tbsp Crumbled Feta Cheese
- Handful of sliced Olives
- Handful of CranberriesÂ
- Handful of WalnutsÂ
Honey Mustard Dressing:Â
- 3 tbsp HoneyÂ
- 1/4 cup Dijon MustardÂ
- 1/2 cup Plain YogurtÂ
- 1/4 cup Olive Oil
- 1 tbsp White Vinegar
- 3 tbsp Lemon JuiceÂ
- Garlic PowderÂ
- Salt
- Black Pepper
Making the Salad
I started by chopping the lettuce and green onions and spread them at the bottom of my serving bowl. I then sliced the cucumbers and halved my cherry tomatoes and added them to the bowl. I sprinkled my corn, sliced olives, and crumbled feta all around my salad. I kept the Avocado and Apple till the end to keep them fresh before serving.
Meanwhile, I prepared my Creamy Honey Mustard Dressing by mixing all the ingredients mentioned above and kept aside to mix in the salad just before serving.
I then sliced the Avocado and Apple and squeezed some lemon juice on them to prevent them from browning and then placed them on top of my salad.
To finish my salad, I garnished with some Walnuts and Cranberries and then mixed in my dressing and enjoyed it in no time. This was a great salad which I will absolutely make again and again.
