Pineapple Dream

It is now starting to get hotter and hotter. I decided it was time to make something refreshing and fruity. The Pineapple dream is a 3 layer dessert that is as refreshing as it is yellow. Kids and adults love it alike, and it is perfect for a hot summer day. Let’s cook and have fun together. 

This recipe makes 1 large pan. 

Ingredients

For the Jello layer:

  • 1 can Pineapple Chunks (1 lb)
  •  1 package Lemon Jello (3 oz)
  • 2 cups Boiling Water 

For the Cream layer:

  • 1 package Cream Cheese (8 oz)
  • 1 1/2 cups Heavy Cream

For the Curd layer:

  • 3/4 cup Sugar
  • 3 tbsp Water
  • 3 tbsp Lemon Juice
  • 1 tbsp Lemon Zest
  • 2 tbsp Flour
  • 2 Egg Yolks

Making the Pineapple Dream

I started by preparing my 1st layer, which is the Jello. In a bowl, I mixed the lemon flavored jello into the boiling water. Once the powder was thoroughly dissolved, I poured the mixture into my Pyrex pan. I reserved the juice from the pineapple can for later use. I spread the pineapple chunks into the Jello mixture and made sure they were spread across the bottom of the pan. I placed the pan in the fridge for an hour. 

While the pan is cooling in the refrigerator, I prepared my second layer. This is a cream cheese based layer. I beat the cream cheese in a stand mixer bowl on medium speed until it became soft, then added my heavy cream and turned the speed up to high. When the cream reached the stiff peaks phase, I stopped mixing. Once the jello has set in the fridge, I spread the cream on top and leveled it with an offset spatula. I returned the pan to the fridge for another 30 minutes.

While the cream cheese layer chilled, I started working on my curd. I mixed the curd layer ingredients with the reserved pineapple juice in a small sauce pan. Once everything was combined, I placed the pan on medium heat, and let it simmer until the mixture thickened and covered the back of a spoon. I then turned the heat off, and let the mixture cool down for 10 minutes. Once the mixture is cool and the cream cheese layer was set, I poured the curd layer on top of the cream cheese layer and leveled it with an offset spatula. I refrigerated the pan for another 5 hours. I decorated the top of the pan with a few pineapple pieces and some blueberries and served it cold.
