Cowboy Caviar Salad

Since we had a Mexican Night hosted, I had to make all the dishes go together. I decided to make this Cowboy Caviar Salad to accompany the tacos Bar. It’s a very easy salad which you can make at anytime and make any dressing you want.
Today, I am making it with a Honey mustard dressing which I love to use with different salads. Let’s cook together and have some fun! 🙂

This recipe makes a large salad bowl.

Ingredients

  • 1 Lettuce heart
  • 1 Mango
  • 1 large Avocado
  • 1/2 cup Corn
  • 1/2 Red Onion
  • 2 European Cucumbers
  • 1 can Black Beans
  • 1 cup Cherry Tomatoes
  • 1 small Jalapeno
  • 1/2 Green Bell Pepper
  • 1/2 Red Bell Pepper
  • A Handful of Cilantro
Honey Mustard Dressing: 
  • 3 tbsp Honey
  • 1/4 cup Dijon Mustard
  • 1/2 cup Plain Yogurt
  • 1/4 cup Olive Oil
  • 1 tbsp White Vinegar
  • 3 tbsp Lemon Juice
  • Garlic Powder
  • Salt
  • Black Pepper

Making the Cowboy Caviar Salad

The most time consuming thing in this salad is the chopping of the ingredients. They need to be chopped/diced finely small forming a colorful & beautiful bowl.
I started by finely dicing all my vegetables to small cubes and kept the avocado until the end before serving so they stay fresh and keep their color.
I then prepared my dressing by mixing all the related ingredients but kept it aside until ready to serve so that the ingredients stay also fresh and crunchy. Once ready to serve, I diced the avocado a little larger than the rest of the vegetables, mixed in the dressing, and sprinkled some finely chopped Cilantro on top. We enjoyed every bit of this amazing and refreshing salad. It can also be served as a dip with some tortilla chips. Everyone during the party enjoyed and loved this salad along with their self made Tacos. 🙂
