As the weather gets hotter and hotter, we wanted to have something refreshing and light. I also wanted to make something easy to make, with fresh ingredients. I decided to make the Asian crab noodle salad with a very delicious peanut based sauce and some small pieces of peanuts for some added crunchiness.

This recipe makes one large bowl.
Ingredients
- 200 g Egg Noodles
- 100 g Surimi Crab
- 3 medium European Cucumbers
- 2 medium Carrots
- 2 Green Onions
- 1/4 Cabbage
- 2 tbsp Peanuts (crushed)
- 2 tbsp Sesame Seed (toasted)
- 1/3 cup Peanut Butter
- 1 tbsp Lime Juice
- 1 tbsp Lemon Juice
- 1 tbsp Honey
- 1 1/2 tbsp Soy Sauce
- 1 tsp Sesame Oil
- 1 tsp Sriracha
- 1/2 tsp grated Fresh Ginger
- 1 large Garlic Clove (crushed)
- 1 tbsp Water
- Salt
- Black Pepper
Making the Crab Noodle Salad
I started by cooking the egg noodles as per the package instructions. While the noodles were cooking, I chopped the green onions into 0.5 cm or 3/16 inch. I then julienned the carrots, cabbage, and the Cucumbers. I separated the Surimi crabs sticks into thin strips. Once my noodles were done, I strained them and washed them with cold water to stop them from cooking. I placed all the vegetables and the noodles in a salad bowl and mixed them together. I mixed all the sauce ingredients in a small bowl and added the sauce in the salad bowl. I mixed them together and sprinkled the crushed peanuts and sesame seeds on top to garnish, and served. This was really a very refreshing and filling salad bowl.
