Beef & Potato Stew

This recipe makes 4 portions. 

Ingredients

  •  1 kg or 2 lbs beef (cubed)
  • 2 Large Russet Potatoes (cubed)
  • 1 Garlic bulb (crushed)
  • 1 medium Onion (diced)
  • 2 Bay Leaves
  • 2 Cinnamon Sticks
  • 2 Cardamon Pods
  • 1/2 tsp Ground Cinnamon 
  • 1/2 tsp Crushed Pepper
  • 1 tbsp Tomato Paste
  • 1 tsp Spicy Pepper Paste
  • Black Pepper 
  • Salt

Making the Beef and Potato Stew

I started by sauteing my onions with a bit of oil on medium heat in the pot of a pressure cooker until they became translucent. I then added my garlic and continued cooking for 3 minutes. I then added my beef cubes, bay leaves, cardamon pods, cinnamon stick, cinnamon powder, and pepper paste, then turned the heat up to high. I let them simmer on high until no liquid remained in the pot. I then covered everything with hot water and put the lid on and sealed the pressure cooker. Once it started to build up pressure, I turned the heat to low and let it cook for an hour. While it was cooking, I fried my potato cubes and kept them aside. Once the hour has passed, I turned off the heat and depressurized the pressure cooker. Once I was sure the pressure was all dissipated, I opened the pressure cooker, turned on the heat to medium, and added my tomato paste, salt, black pepper, and the potato cubes. I let them simmer for about 5 minutes and turned off the heat. 

I served this delicious dish with a side of rice. We ate so much, we had to take a nap.
