Cacio e Pepe

Here we are, in the middle of a once in a hundred years epidemic. Not a lot of people are willing to get out and buy groceries very frequently. So today, we will cook a delicious pasta dish that will use only 3 main ingredients (not counting salt and water). I know it feels too good to be true, but it really is.  Let’s cook together and have fun! 🙂

This recipe makes 1 portion. 

Ingredients

  • 100g Pasta (thick starchy pasta is  Preferred) 
  • Peppercorns, dry roasted and crushed
  • 1/2 cup Grated fresh Parmesan cheese (Traditionally Pecorino cheese is used but we prefer Parmesan)

Boiling the Pasta

Wait don’t skip this section. We don’t want to boil the pasta the traditional way. We will use the widest pan we have to boil the pasta in 400ml of water. We want to reduce the amount of water we use to boil our pasta. The reason why we want to do that is that we want the highest concentration of starch in the water possible. We will also make sure that the pasta fits in the pan horizontally. Boil the pasta to slightly less than your preferred texture. It will continue cooking as we put things together. We like our pasta overcooked so we kept it in through the next step.

We do not get rid of the pasta water. In fact, after we remove our pasta, we keep the water on the stove and reduce it by half. 

Putting Things Together

In a pan add your pasta, the pepper, and some of the pasta water we reserved, along with half the cheese. We mix together everything until the cheese dissolves. Then add the rest of the cheese and adjust the thickness of the sauce by adding water if it is too thin; or reducing on the heat if it is too thick.

Garnish with extra pepper as per your taste.
