Chicken & Beef Tacos

Few Days ago was my Husband’s Birthday and since he loves Mexican food, I decided to host a Mexican Theme party for family and Friends. Mexican food is not complete without making Tacos. I had in mind to make a do-it-yourself tacos bar where I will have all the needed ingredients and topping so everyone makes his own taco as per his taste and everyone will be happy. I made an authentic marination which I will share with you below. I also made a Cowboy Caviar Salad on the side. Let’s start cooking together and have some fun! 🙂
This Recipe makes around 30 Tacos.

Ingredients

For the Beef Marinate:

  • 2 Garlic Cloves (Crushed)
  • 1 tbsp Lime Juice
  • 1 tbsp Orange Juice
  • 1 tbsp Soy Sauce
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp White Vinegar
  • 1 tbsp Olive Oil
  • 1 tsp spicy paste
  • 1 tsp dried Oregano
  • 1 tsp Coriander Powder
  • 1 tsp Ground Cumin
  • 1/2 tsp Chili powder
  • 1/2 tsp Paprika
  • 1/2 tsp Crushed red pepper
  • 1/4 tsp Cayenne powder
  • Salt

For the Chicken Marinate:

  • 1 oz or 30g Chile Guajillo (Mexican dried pepper)
  • 1 oz or 30g Chile Ancho (Mexican dried pepper)
  • 1 Small Onion
  • 2 Garlic Cloves
  • 1 tbsp Lime Juice
  • 1 tbsp Orange Juice
  • 1 tbsp Ground Cumin
  • 1 tsp dried Oregano
  • Salt

Making the Tacos

I made both marinates a night before and kept the chicken and beef marinated overnight to get the most out of the flavors. For the Chicken Marinate, I put the dried peppers, after removing their seeds, with the onion in a sauce pan and covered them with water and let them boil for 20 mins. Once the 20 mins passed, I used a hand blender to blend the peppers and onion with the rest of the chicken marinate ingredients and I also added 1/2 cup of their boiling water until got a smooth mixture. I then mixed the chicken strips in the mixture in a large zip-log bag and kept refrigerated until the next day.

For the Beef marinate, I just mixed all the ingredients together and mixed the beef strips in similar to what I did with the chicken. The next day, I just cooked them separately in 2 skillets until well cooked and served them hot. 

For the Spicy sauce, I used the chicken marinate and then added 1 large crushed tomato, hot sauce, Black Pepper and Olive oil. I also made Guacamole (Avocados, Tomatoes, green onions, cilantro, Lime, salt, Pepper) and Pico de Gallo (Tomatoes, Red Onions, Jalapeno, Cilantro, Lime, Salt) as well on the side. Along side the guacamole and Pico de Gallo, I served sour cream for the sauces.

For the toppings, I served in a lazy Suzanne tray: Chopped Lettuce, Lime slices, chopped green onions, sliced Avocados, fresh/pickled Jalapeno, Corn, Shredded Mexican cheese, and Sauteed onions & bell peppers.

You can use Corn or Flour tacos tortilla as per your liking, we used both. You can also warm them before serving.

It was an amazing night and Birthday, everyone enjoyed the food/Ambiance and most importantly my Husband who enjoyed his birthday and couldn’t stop eating those tacos.  🙂
