Chicken Curry

A lot of recipes fall under the umbrella of Curry. Out of all of the dishes that are called chicken curry, this is the healthiest one. This creamy sauce does not contain any butter or cream. Fruits and vegetables are the basis of this curry. They give it its consistency and more taste packed per spoonful than any other curry.

This recipe makes 4 portions. 

Ingredients

  • 4 chicken breasts 
  • 1/2 Red Bell Pepper sliced  
  • 1/2 Green Bell Pepper sliced 
  • 3 small diced Carrots 
  • 1 small diced Potato
  • 1 medium diced zucchini
  • 2 medium diced tomatoes
  • 1 1/2 diced Apples 
  • 1 1/2 diced Banana
  • 1 tsp Tomato Paste
  • 1 tbsp Curry Powder
  • 1/2 tsp Chilly Powder 
  • 1/2 tsp Garam Masala 
  • 1 tsp Shredded Fresh Ginger
  • Salt 
  • Black Pepper 
  • Optional: Yellow Bell Pepper

Making the Curry

I started by chopping all my fruits and vegetables. I wanted to make sure that when i started cooking, everything will be ready to go and I would not have to stop. I then cut my chicken to 1 inch (2.5 cm) and added salt and pepperAt this point most of the hard work is done.

I fried my chicken cubes on medium heat with some oil until there were slightly golden on the outside and put them aside. I then started frying one by one the bell peppers, carrots, potatoes, zucchini, and the apples in a large pan with a tablespoon of oil each and moving them to a dish after 5 minutes and lightly browned. I then fried the bananas for 5 minutes in a tbsp of oil then added the diced tomatoes and added back all the fried fruits and vegetables. I covered them with water and put the pan lid on. Once the water boiled, I checked that my carrots are done by poking them with a fork, it went in with minimal resistance. At that point I turned off the heat, got my hand blender out and blended everything until the mixture became smooth. I turned on the stove on low heat and added my chicken, the tomato Paste and all my spices. I tasted and added spices as needed. 

I served the curry with a side of white rice. My husband ate so much he had to take a nap. Try this healthy delicious recipe and let us know what you think.
