Usually Osmalieh dough is used in middle eastern sweets. It is usually used to add a crunchy texture to sweets. It is also very delicious. On its own, Osmalieh is not sweet, so why not use it in a savory dish? Better yet, why not make it the star of the dish? Let’s cook together and have some fun! 🙂Â
This recipe makes 4 portions.
Ingredients
For the chicken
- 4 Chicken BreastsÂ
- 1/2 Cup FlourÂ
- 2 Eggs
- Paprika
- SaltÂ
- Black PepperÂ
- Garlic Powder
- Chili Powder
For the osmalieh dough
- 1 Cup FlourÂ
- 1/2 Cup Corn Starch
- 1 1/4 Water
- 3 tbsp oil
- Pinch of salt Â
Making the Osmalieh Dough
I started by mixing all the Osmalieh dough ingredients together. The dough will be very runny. I let the mixture rest for 10 minutes. I then placed the dough in a pastry bag with a tip with a very fine nozzle. I heated a pan over medium heat on a stove. I dripped a few droplets of oil on a napkin and brushed the pan with it. I then used the pastry bags to dispense very thin lines of dough on the pan. I moved the pastry bag in circles around the pan quickly (as per the video). I let the dough cook for about 30 sec and removed it from the heat. I repeated this process until all the dough was cooked.

Preparing the Chicken
I butterflied my chicken breasts and cut each butterflied chicken into 3 pieces. I mixed the 2 eggs and placed them in plate. In another plate, I mixed the flour, paprika, salt, pepper, garlic powder, and the chili powder. I added the same spices to the chicken and egg mixture. Â
I took a piece of chicken dipped it in the flour, then in the eggs. I then took a few Osmalieh dough and wrapped the chicken in it. I then placed it on an oiled pan. I repeated the process for until the rest of the chicken was wrapped. I brushed the top of each chicken Osmalieh with some butter and placed the pan in a 350 degree Fahrenheit or 180 degree Celsius oven. Once the top became golden (You can also fry your chicken but I decided to bake them). I removed them from the oven and served with Toum (Garlic) paste, fries, and pickles.
