Chocolate Caramel Cookie Bars

Those bars are very loved by kids and even by adults. My mom used to make them for us and it didn’t used to last long in the fridge 🙂 let’s make them together today and I promise that you and your loved ones will enjoy them. I made a twist by adding some Halawa to the recipe and which made it heavenly delicious! Let’s cook together and have some fun! 🙂

This recipe makes around 20 bars.

Ingredients

For the Crust:

  • 2 cups of Graham Crackers or Digestive cookies
  • 2 tbsp Traditional oats
  • 1/2 pack or 100g of Butter (melted)

For the Caramel Layer:

  • 1/2 pack or 100g of Butter
  • 375g Sweetened Condensed Milk
  • 1/4 cup Brown Sugar
  • Pinch of Cocoa

For the Chocolate Layer:

  • 200 ml Heavy Cream or Nestle Crema
  • 200g Dark Chocolate bar
  • 1 tsp Vanilla Extract

Making the Chocolate Caramel Cookie Bars

I started with the crust by putting the crackers with the oats in my food processor until crushed. I kept them crunchy so I didn’t Process them a lot. I then poured them on my baking sheet, then melted the butter in the microwave, and mixed it with the crackers. I then spread it in the bottom of the baking sheet to make my 1st layer. I placed it in an oven preheated to 350F (177C) for 10 mins or until slightly browned.

Meanwhile, I prepared my 2nd layer, which is the caramel one. In a sauce pan, I melted the butter on medium heat and then added the sweetened condensed milk, the brown sugar, and the cocoa. I let the mixture boil until it caramelized and I then poured it on top of the crust and let it chill. 

Next, I prepared the chocolate layer. In a small pan, I added the cream and vanilla and let it warm on medium heat. I then added the chocolate bar cut into small pieces on top until they are completely melted. I added this mixture on top of the caramel layer on my baking sheet and spread it with my offset spatula.

To finish, I garnished the top with some crumbled Halava pieces and some crushed pistachio. I let it chill in the fridge for at least 4 hours before cutting into bars. 

We really enjoyed those bars kids and adults and it only lasted 2 days because we couldn’t stop eating. 🙂
