Who doesn’t love cookies? and what about a giant Pie sized cookie with extra gooey marshmallows with the chocolate chips. Let’s cook together and have some fun! 🙂
This Recipe makes 1 9 inch Pie.
Ingredients
- 3/4 cup Softened Butter
- 2/4 cup Brown Sugar
- 1/4 cup Granulated Sugar
- 1 Egg
- 1 tsp Vanilla extract
- 1 tbsp Cornstarch
- 1 tsp Baking Soda
- 1/4 tsp Salt
- 1 1/2 cup Chocolate Chips (i mixed semi sweet and dark)
- 1 cup Mini Marshmallows
Making the Cookie Pie
I started by beating the softened butter in the bowl of my stand mixer until it became smooth. I then added both sugar kinds and beat on medium speed until combined. Next, I mixed in the egg with the Vanilla extract and beat for 2 more minutes. I then added the dry ingredients (Flour, Cornstarch, Baking soda, and Salt) and mixed everything until well combined. I incorporated the chocolate chips and Marshmallows in the batter by beating everything together for final time for 1 minute.
I transferred the mixture into my Pie pan and baked it in a preheated oven at 350 degrees Fahrenheit or 177 degrees Celsius for 20 minutes making sure the center is baked and the marshmallows are golden and trying not to over-bake because it should be a bit gooey.
We Enjoyed our giant cookie hot with a scoop of Vanilla ice cream and it was just heavenly perfect and delicious.
