This recipe makes 4 servings.
Ingredients
- 1 lb or 500 g of Chicken Breasts
- 1 can (14.5 oz or 400 ml) Coconut Milk
- 1 medium Onion (Chopped)
- 2 Garlic Cloves (Crushed)
- 2 small Tomatoes (Cubed)
- 2 Jalapenos (Minced)
- 1/4 Red Bell Pepper (minced)
- 1/2 cup Water
- 1 tbsp Ginger (grated)
- Red Chili Powder
- Cumin Powder
- Coriander Powder
- Turmeric
- Garam Masala
- Crushed Red Pepper
- Salt
- Black Pepper
Making the Coconut Chicken
I started by cutting my chicken breasts into cubes, and sprinkled some salt and black pepper on them. I added a bit of oil in a pan and fried my chicken on medium heat. Once the chicken is cooked, I removed it from the pan and kept aside. I then added a bit more oil and placed my onion and jalapenos. I sauteed them on medium heat until the onions became translucent. I added my crushed garlic and red pepper and cooked for another 3 minutes. I mixed in my ginger, all the spices, and the water. I continued cooking for another 3 minutes then added back my chicken and tomato cubes and covered the pan. I let everything cook together and exchange flavors for around 5 minutes or until they started simmering. Once it started to simmer, I added the coconut milk and continued cooking for another 10 minutes. I then turned off the heat and garnished with some fresh chopped coriander (optional).
I served my Coconut Chicken with some white rice and my husband and I loved it a lot. Try it and let me know what you think.
