Dried Tomatoes, shrimp, pasta, and a delicious sauce. The great ingredients to start with, but put these ingredients and the result is greater than their sum. Let’s cook together and have some fun! 🙂Â
This recipe makes 4 portions.
Ingredients
- 400 g Fettuccine PastaÂ
- 500 g Large Frozen Shrimps (peeled, deveined, and tail off)
- 1/2 cup Dried TomatoesÂ
- 1/2 cup Tomato Sauce
- 1 cup Heavy Cream or Half and Half
- 1 cup Pasta Water (preserved from the water used when boiling pasta)Â
- 3 Garlic ClovesÂ
- SaltÂ
- Black PepperÂ
- Oregano
- Fresh or Dried Basil
- 2 Cinnamon SticksÂ
- 2 Cardamom pods
- 2 Bay LeavesÂ
- 1/4 Onion
- Lemon Slice
Making the Pasta
In a pan, I added 30 oz or 1 liter of water, the cinnamon sticks, cardamon pods, bay leaves, 1/4 onion, and the lemon slice. I turned on the heat to high until the water started boiling. I then reduced the heat to medium and added my shrimps. I left the shrimps in the boiling water until they turned pink (about 7 min). Once the shrimps are done cooking, I removed them from the boiling water and put them into an icy water to stop them from continuing to cook. I discarded the aromatics I used to boil the shrimp.
I cooked the pasta as per the pasta pack instructions. Once the pasta was done cooking, I reserved 1 cup of pasta water for future use.
I added the minced garlic along side some oil in a pan on medium heat and fried the garlic until lightly brown. I then added the dried tomatoes and cooked it for 2 minutes. I added the tomato sauce and the pasta water to the pan. Once the mixture boiled, I mixed in my cream (or half and half) at this point the sauce will turn pink. I finished the sauce by sprinkling the dried basil and the oregano then added salt and pepper to taste. I kept the sauce on medium heat until it thickened enough to coat the back of a spoon.
Finally the dish is ready to come together. I added the pasta and the shrimp to the sauce, and mixed them all together. I then put the pasta in my serving plate and decorated with some fresh basil.
