Giant Rainbow Cookie

I made this Giant Rainbow cookie to celebrate father’s day, and the beginning of the summer season. A party is not festive enough without colorful sprinkles, so I made sure to use colored sprinkles inside my giant cookie and I also decorated with them.

This Recipe makes one 9 inch cookie.

Ingredients

  • 2 cups All purpose White Flour
  • 3/4 cup Unsalted softened Butter 
  • 1/2 cup Light Brown Sugar
  • 1/2 cup Granulated Sugar
  • 1 Egg
  • 1 tbsp Vanilla Extract
  • 2 tsps Baking Powder
  • 1/2 tsp Salt
  • 1/4 tsp Baking Soda
  • A pinch of ground nutmeg 
  • 1/3 cup rainbow Sprinkles 
  • Optional: 1/4 cup White Chocolate Chips 

Making the Giant Rainbow Cookie

I started by beating the butter, light brown sugar, and white sugar together in a mixer with the paddle attachment for 2 minutes. I then added the egg and Vanilla extract and beat them some more until they are combined. 

I prepared my dry ingredients by mixing together the flour, baking powder, salt, baking soda, and the nutmeg in a separate bowl . While the mixer is running I gradually added my dry ingredients to the butter and sugar mixture. Once all the dry ingredients are added and everything is combined I turned off my mixer. I wanted to make sure I do not over-mix my batter. I then folded in my sprinkles and chocolate chips into the batter using a rubber spatula.

I brushed my Springform Pan with some butter and floured it. I poured my batter into the pan and smoothed its top using an offset spatula. I sprinkled some more rainbow sprinkles and white chocolate chips on top. I placed the pan in an oven preheated to 350 degrees Fahrenheit or 180 degrees Celsius for 25 minutes. I made sure the cookie was done cooking by inserting a toothpick into it and making sure it comes out clean. Once done cooking, I let it cool before garnishing with some buttercream. Alternatively, you can also enjoy it with some vanilla ice cream. 

The kids and the dads in the family really loved this cookie and thought it really tasted like a regular cookie. We all enjoyed Father’s day and the giant rainbow cookie helped make everyone just a little bit happier!
