This recipe is an authentic Khaliji Dish in which the main ingredient is its spices. Kabse Spices are usually brought from Gulf countries; they are strong spices with some spicy flavor but it’s very worth it to buy those spices! The dish is made with rice and meat, can be garnished with toasted nuts and served hot with daqqus, which is a spicy home-made Arabic tomato sauce. Let’s cook together and have some fun! 🙂
This recipe makes 4 servings.
Ingredients
- 1 kg or 2 lbs Chicken breasts
- 1 Cup White Rice
- 2 Cups Chicken Broth
- 1 medium Onion (Diced)
- 2 Garlic cloves (Crushed)
- 1/2 Green bell pepper (Diced)
- 1/2 Red bell pepper (Diced)
- 2 Carrots (Shredded)
- 2 medium Tomatoes (Diced)
- 1 tsp Tomato paste
- 1 tbsp Kabse Spices
- 1 tsp 7 spices
- 1/2 tsp ground Cinnamon
- 2 tsp chopped Fresh Cilantro
- Red hot Pepper/Spicy (as per your taste)
- Black Pepper
- Salt
- Pine nuts and Almonds for Garnishing
Making the Kabse
I started by cooking my chicken breasts seasoned with salt & pepper in some vegetable oil in a skillet on medium heat until they are slightly brown. I removed them and kept aside.
Next, I added my onions to a pan on medium heat and cooked them in a bit of oil until they became translucent. I then added the garlic and Bell pepper and cooked them for 3 more minutes. I then mixed in the tomatoes, shredded carrots, and tomato paste. At this point, I took around half a cup of the mixture and put it in another small sauce pan, to use it for my sauce which we will make at the end.
I then added the rice to the 1st pan and added all the spices. I poured my hot chicken broth on top on high heat until it simmered. Once it simmered, i lowered the heat and covered the pan until the rice is cooked and no more liquid is in the pan.
For the sauce, I added the cilantro, 1 tsp of kabse spices, Red hot pepper, salt, and black pepper to the cup I reserved earlier. I mixed them all together and added 1/4 cup of water or chicken broth and left on medium heat until it simmered. Once it simmered, I used my hand blender to blend my sauce until it became smooth. I placed my rice in a serving dish and added my cooked chicken on top. Finally, I toasted some pine nuts and almonds and used it to garnish my dish . I served the sauce on the side.
This is really a must try dish which everone who loves spices will adore 🙂
