Now that the weather is getting hotter, I like to make more salads. I feel they are refreshing and they take my mind away from the heat. It’s mango season so lets make a mango Themed Salad. Let’s cook together and have some fun! 🙂
This recipe makes a medium sized bowl.
Ingredients
For the salad:
- 1 Romain Lettuce Heart
- 1 Chicken Breast (breaded or grilled)
- 1/2 cup Cherry Tomatoes
- 1 small Mango
- 1 small Avocado
- 1/2 small Red Onion
- 1/4 cup Cilantro (Chopped)
- 3 medium Radishes
- 1/2 cup halved Almonds (toasted)
- 1/2 cup Croutons
For the Honey Vinaigrette Dressing
- 1/4 cup Extra Virgin Olive Oil
- 1 tbsp White Vinegar
- 1 tsp Dijon Mustard
- 1 tsp Honey
- 1 Garlic Clove (Crushed)
- 1 tbsp Lemon Juice
- Salt
- Black Pepper
Making the Mango Avocado Salad
I started by prepping the fruits and vegetables. I chopped the lettuce into 1 inch pieces, I cut the cherry tomatoes in half, I diced the mangoes and sliced the avocados and the radishes and, I Julienned the onions. I placed everything in a large bowl along with the cilantro. I sliced the chicken and placed it on top, then I toasted some almonds and spread them on top of the salad to garnish.
I wanted to make my croutons extra special. I had some stale bread and decided to make my own croutons. I cut the bread into cubes and placed them in a baking pan, I brushed them with olive oil and sprinkled some zaatar for some extra deliciousness. I placed them on the middle rack of an oven preheated to 350 degrees Fahrenheit or 180 degrees Celsius for 10 minutes or until the edges began to brown.
I mixed all the dressing ingredients together in a small bowl. I did not mix my dressing into the salad until I was ready to serve it. Adding the dressing too early makes the salad ingredients wilt and makes the salad look less appetizing.
Finally, when I was ready to serve, I added my home made croutons to the salad and drizzled the dressing on it. I mixed everything together to make sure everyone got some of the dressing and served.
This salad was very refreshing. The mango was very refreshing and the croutons and the toasted almonds were extremely crunchy. The avocado added an extra layer of texture and the dressing brought all the flavors together. Try it and let me know what you think!
