Summer is my favorite season of the year, and I am so sad that it’s coming to an end. But before summer is over, I decided to make and enjoy the last summery and refreshing dessert. So here is my Mixed Fruit Jell-O Cheesecake with 2 layers of Jell-O with fruits separated by a layer of whipped cream cheese. Let’s cook together and have some fun! 🙂
This recipe makes a 9 by 13 inch pan.
Ingredients
- 1 pack of Strawberry Jell-O (3 oz or 85 g)
- 1 pack of Raspberry Jell-O (3 oz or 85 g)
- 1 cup boiling Water
- 10 medium Strawberries (Sliced)
- 6 oz or 170 grams fresh Raspberries
- 1 tbsp Sugar
- 1 can Crushed pineapple (1 lb or 500g)
- 2 mashed Bananas
- 8 oz of Cream Cheese (softened)
- 1 cup of Heavy Cream
- 1/2 cup sugar
- 1/2 tsp Vanilla Extract
- 1 tsp Lemon Zest
- 1 tsp Lemon juice
Making the Mixed Fruit Jell-O Cheesecake
I started by adding the strawberries, raspberries, the pineapple can (with the juice), and the tbsp of sugar in a microwave safe bowl. I microwaved them for 2.5 minutes. I then mashed them with a fork but made sure they still have some small chunks. I then added the mashed bananas and mixed it in, and set the bowl to the side.
In a large bowl, I dissolved my Jell-O packs in the boiling water. Once dissolved I mixed in the fruit mixture. I poured half of this mixture in a 9 by 13 inch pan and refrigerated for one hour or until it set. I kept the remaining Jell-O mixture aside at room temperature.
In the bowl of a stand mixer, I mixed my cream cheese, heavy cream, 1/2 cup sugar, vanilla extract, lemon zest, and lemon juice and mixed them until soft peaks form.
Once the Jell-O layer had set, I spread my cream cheese layer on top of the Jell-O layer and leveled it with an offset spatula. I poured the rest of the Jell-O mixture on top of the cream cheese layer. I then placed the pan in the refrigerator for few hours (or overnight) for the Jell-O to set before serving.
