Light, refreshing, garlicky, and very easy to make. This Pasta fatteh is perfect for a lazy, yet delicious dinner. This dish can also be prepared without the meat and therefore be vegetarian. Let’s cook together and have some fun! 🙂

This recipe makes 2 portions.

Ingredients

  • 200 g Pasta (spaghetti #5)
  • 2 Cups Yogurt
  • 2 Garlic Cloves
  • Dried Mint
  • 100 g Ground Beef
  • 1/4 Onion
  • 1 tbsp Pine Nuts
  • 7 Spices
  • Cinnamon
  • Salt
  • Black Pepper

Making the Pasta Fatteh

I started by cooking my pasta as per the box instructions. While the pasta was cooking I minced my onions and sauteed them in a skillet on medium heat. Once translucent, I added my ground meat, a pinch of 7 spices, a pinch of cinnamon, salt, and pepper. I kept the skillet on medium heat until the meat was cooked. I toasted my pine nuts in a very small skillet until they became a deep golden brown. I crushed my garlic with some salt, placed them in a bowl and mixed them with the yogurt.

I assembled my Pasta Fatteh dish by placing a layer of pasta, followed by a layer of the garlicky yogurt, sprinkled some dried mint and topped them with the toasted pine nuts. The dish can be eaten at this point as a delicious vegetarian dish. In fact, this is the way my husband prefers it. But, If you are feeling like you need some more protein, add a layer of the meat mixture we just made and you get nothing less than instant perfection.

This dish is what I make when I really don’t feel like cooking. My husband and I love it and he asks me for it all the time. Give it a try and let me know what you think.

Enjoy! 🙂
