Pesto Steak Bites

I tried this awesome dish at a restaurant in Lebanon. I loved the flavor combination and I wanted to make it myself so that we can enjoy it at home. So, Let’s make this delicious dish. Let’s cook together and have some fun! 🙂

Ingredients

  • 500 g or 1 lb Beef Tenderloin
  • 1 cup Heavy cream 
  • 1 bunch of Basil
  • 1/4 cup Olive Oil 
  • 2 Garlic Cloves (crushed)
  • 1/4 cup Pine Nuts (divided)
  • 1/4 cup Parmesan Cheese (grated)
  • A squeeze of Lemon juice
  • Black Pepper 
  • Salt 

Making the Pesto Steak Bites

I started by making my Pesto sauce. I toasted 2 tbsp of Pine nuts in a skillet on low heat until golden brown. I then blended them alone in the food processor until they became 1 to 2 millimetres or about 1/16 of an inch in size . I added the cold fresh basil leaves, the crushed garlic, 3/4 the quantity of the olive oil, black pepper, and salt. I processed them together until they had a sandy paste consistency. I then moved them to another bowl, added the Parmesan cheese, the squeeze of lemon and the remaining olive oil and mixed them in to the paste. I usually make a large quantity, use what I need, then freeze the rest in an ice cube tray. Once they freeze, I move them to a zip lock bag and keep them in the freezer until I need them. 

For the steak bites, I cut my beef to bite size cubes. I salted and black peppered them and sauteed them in a skillet on medium heat until they got to my desired temperature. I then added my pesto paste and mixed them with the beef. Once mixed together, I mixed in my heavy cream, and let everything simmer until the sauce thickens and sticks to the back of a spoon. I served them and garnished them with the rest of the toasted pine nuts (2 tbsp). As a side dish, I made a delicious Gratin Dauphinois, alternatively you can enjoy them with some fries.
