Raspberry Swirl Vanilla Ice Cream

I like ice cream… no, no I love ice cream… I mean I really really really love ice cream. I can eat it all day. I wanted to learn how it is made… Here’s my version of this delicious treat. Let’s cook together and have some fun! 🙂

Ingredients

  • 2 cups Fresh Raspberry
  • 1/2 cup Fresh Blueberry
  • 2 tbsps Sugar
  • 1 tsp Salt 
  • 1 can Sweetened condensed milk (14 oz 400 ml) 
  • 1 tsp Vanilla Extract
  • 2 cups Heavy Cream 

Making my Raspberry Swirl Ice Cream

I mixed the raspberries in a small pan along with 1 tbsp sugar and 1/4 tsp salt and let them simmer on medium heat until they become softer and release their liquid. I then strained them to remove any solids and put back on on heat until the sauce thickens. I transferred them to a glass container and let them chill. I did the same with the blueberries.

I mixed the condensed milk with the vanilla extract and 1/2 tsp of salt. I also whisked the cream in a stand mixer bowl on medium speed until I got stiff peaks. Then I started adding the whipped cream into my condensed milk mixture and gently folding with a rubber spatula.

I started by building my ice cream layers in a loaf pan by 1st putting a layer of cream (1.3 of the total quantity) and adding on top 1/3 of raspberry and 1/3 of blueberry mixtures and making them a swirls using a knife or toothpick and then repeating those layers for 2 more times. I covered it with a plastic wrap and froze it for 8 hours (or overnight). 

I served the ice cream scoops with some crushed graham crackers to give it an extra crunchy flavor with every bite. This recipe is a must try during hot summer days, it’s a real treat 🙂
