I thought this would be good, but I underestimated how well the flavored Orzo pairs with the Salmon. This is an easy and light summer dish. Thanks to the combination of lemon and basil, this dish is very refreshing and cooling. This was very delicious so I cannot wait to share this recipe with you. Ingredients
- 400 g Orzo Pasta
- 4 slices of Salmon Filets
- 2 tbsp Butter
- 6 Garlic Cloves (Crushed)
- 1 cup Vegetable Broth
- 2 tbsp Lemon Juice
- 1/2 cup Grated Parmesan Cheese
- 1/4 cup fresh Basil Leaves
- 1/4 tsp Garlic Powder
- Pinch of Dried Basil
- Salt
- Black Pepper
Making the Salmon with Lemon Basil Orzo
I started by boiling my Orzo pasta as per the pack instructions. When they were done cooking, I drained them, drizzled some olive oil on them, and put them aside for later use. I salted and peppered my salmon and I placed them in a lightly oiled skillet and cooked them for 4 minutes on each side on medium heat. I removed them and also kept them aside for later use. In the same skillet, I melted my butter on medium heat, and sauteed my garlic in it for 2 minutes. I then added my vegetable broth and left it on the heat until it simmered. At that point, I added my lemon juice, dried basil, black pepper, garlic powder, and salt, then turned the heat off.
I placed the cooked orzo on my serving plate, then added the grated Parmesan and the chopped fresh basil leaves on top. I added 3/4 of the sauce on the orzo, then placed my salmon, and covered them with the remaining sauce. I served it hot and could not stop eating!
