I wanted something a little different for breakfast. I usually have a piece of cake when i make some, but I felt like I don’t want to have a sugary breakfast for the next few days. I thought hard about what I wanted to make, and I came up with the idea of a savory cake. Let’s cook together and have some fun! 🙂
This recipe makes 1 cake.
Ingredients
- 2 cups Flour
- 2 tsp Baking Powder
- 3 Eggs
- 1/2 cup Milk
- 1/2 cup Yogurt
- 1/2 cup Olive Oil
- 1 tsp White Vinigar
- Salt
- Black Pepper
- 1/2 cup Sliced Black Olives
- 1/4 minced Fresh Mint
- 5 springs Fresh Thyme (leaves only)
- 3 minced Chives
- 1/3 cup shredded Mozzarella
- 1/3 cup Feta
- 1/3 cup shredded Cheddar
- Optional: add or replace above cheeses with whatever cheese you like, as long as all the cheese adds up to 1 cup
Making the Cake
I mixed together the flour, baking powder, salt, and black pepper in a large bowl. I then added the eggs, milk, yogurt, olive oil and white vinegar and mixed everything together until well combined. I then added all the rest of the ingredients except for a few olives, some cheese and a few thyme leaves. I sprayed some oil in my 9 inch loaf pan and spread them around the pan using a napkin.I then pored everything into the loaf pan and garnished the top with the left over olives, cheese, and thyme.
I placed it on the middle rack of a preheated 350 degree Fahrenheit or 175 degree Celsius. After 35 minutes in the oven, I inserted a tooth pick into the cake to test if it is done baking. The tooth pick came out clean so I turned off the oven and cracked the door to allow the cake to start cooling in the oven for 15 minutes. I took the cake out of the oven and let it cool down for an additional 10 minutes before cutting into it.
I really couldn’t wait to taste this cake. It smelled so good when baking in the oven. When it came out it looked just as delicious as it smelled. When I took a bite out of it, it was even more tasty than how it looked and smelled.
