This is a very old traditional Lebanese dish. No doubt every Lebanese has at least tasted this staple. It is a healthy vegetarian, grain based dish that is easy to prepare and delicious to eat. It can be enjoyed as a main dish along side a salad or yogurt; some people also eat it as a side dish or as a replacement for rice.
This recipe makes three servings.
Ingredients
- 1 cup Coarse Bulgur
- 1 medium Onion – Chopped
- 1 medium Tomato – Diced
- 1 Jalapeno – minced (remove seeds if you don’t like it spicy)
- 1/2 Green Bell Pepper – Chopped
- 1/2 Red Bell Pepper – Chopped
- 1 1/2 tbsp Tomato Paste
- 2 cups Water
- 7 Spices
- Salt
- Black Pepper
Cooking the Bulgur
I started by sauteing my onions and jalapenos in a medium sized sauce pan, on medium heat. Once the onions are translucent, I added the green and red peppers and sauteed them for 5 more minutes. I added the Bulgur, tomatoes, tomato paste, and all my spices and mixed everything together. I covered them with the water and turned the heat up to medium high. Once they started to boil, I reduced the heat to low and covered the pan with its lid until all the water was absorbed and evaporated (about 15 min). I then tasted and checked if I needed to adjust the spices, and made my adjustments.
I served the bulgur with a yogurt salad. I crushed 2 cloves of garlic and sliced 2 cucumbers and added them to 2 cups of plain yogurt and some dried mint and salt to taste.
This dish took us back home and was very delicious.
