Tuscan Salmon

My husband and I like to have one meal of sea food per week. This week I cooked something very special. This perfectly cooked piece of salmon covered with a deliciously creamy garlicky sauce and paired with yellow rice is a meal that deserves to be served in a fancy restaurant. I want to share with you this lovely meal. So… Let’s cook together and have some fun! 🙂 

This recipe makes 4 Servings. 

Ingredients

  • 4 Salmon Fillets
  • 2 tsp Olive Oil 
  • 2 tbsp Butter 
  • 5 Garlic Cloves (Crushed) 
  • 1 Onion (Chopped) 
  • 1/3 cup Vegetable Broth 
  • 1/2 cup Sun-dried Tomatoes
  • 1 1/2 cup Heavy Cream or Half and Half 
  • 1/4 cup Spinach Leaves (Chopped)
  • 1/3 cup Freshly Grated Parmesan Cheese
  • Dried Basil
  • Paprika 
  • Salt 
  • Black Pepper

Making the Tuscan Salmon

I started by seasoning my salmon filet with salt and black pepper on both sides and placed them in an oiled pan on medium high heat. I left them on heat for 10 minutes, flipping halfway through. When the salmon was done cooking, I moved it to the side and started working on the sauce. 

I melted the butter in the same pan I used to cook the salmon. I sauteed the onions in the melted butter until it became translucent. I added my garlic to the translucent onions and cooked for a few more minutes before pouring in my vegetable broth. I let the mixture simmer for 10 minutes, then added the sun-dried tomatoes and let them simmer for 5 minutes. I then turned the heat down to medium low and added my cream to the mixture. I kept stirring occasionally until the mixture got to a simmer. At that point, I added my dried basil, paprika, salt, and black pepper. I let the sauce simmer until it thickened (if you want to speed up the thickening process add some corn starch in water). I finally added my Spinach and Parmesan and mixed everything together until the cheese melted. The sauce is now ready, so I moved the salmon fillets back into the sauce and covered them with it. I garnished the dish with some fresh parsley and served them with some rice that I colored yellow using some turmeric.
